The quality of our meat is the reason why people from Russia and abroad are visiting our place already for many years, because they are convinced that we are serving the best pieces of meats in town! We, of course, from our side are doing everything to meet the high expectations of our guests, using only the best parts on our menu, Rib eye, Tenderloin and Rib’s

There are to kinds of imported beef served in Moscow currently, grass fed and grain fed! The different between is that if you feed the cattle with grain, you will get the nice fat marble like traces in the meat! It also keeps the meat more tender and juicy during the cooking process! That is why we are using only grain fed beef at all our El Gaucho restaurants.

It also depends how long you feed the cattle. The time of feeding is between 90 and 210 days. Of course, the longer you feed the fatter becomes the meat and it will be more tender. It also gets bigger, so the ideal time of feeding is around 150-180 days.

We are also checking on the companies producing the meat on the spot. That is why our directors and chefs have already been several times to different companies in Australia, Chile, Argentina, New Zealand and the USA to check on how the cattle is fed, and under which conditions and circumstances the meat is cut, stored and delivered to Moscow! We are working very closely with the companies supplying the meat, so we are always aware if there is a new and interesting meat in town! We are checking it in several stages from the chef through the owners, and only if every one has agreed hat the quality meets our expectations we will serve it to you. This is I think the main reason, of our success!

The most important thing you might not know, the meat we are serving, is delivered to us fresh and not frozen.

PS: By the way, choosing between Australian or American beef is more a question of taste, like choosing between a BMW and a Mercedes.
